Cowboy Caviar

This is a delicious type of dip/salsa. Most of the produce you can get from your local Farmer's Market. Guaranteed fresh! Everything else read the allergen labels to assure it was not produced in a factory that produces wheat on the same factory belts. Enjoy!

2 tbsp red wine vinegar
1 ½ to 2 tsp hot sauce
1 ½ tsp salad oil
1 clove minced garlic
1/8 tsp pepper
1 firm avocado
1 can black eyed peas
1 can corn kernels
2/3 c sliced onions
2/3 c chopped cilantro
½ lb Roma tomatoes chopped

In a large bowl, mix vinegar, hot sauce, oil, garlic, and pepper.
Peel pit and cut avocado into cubes. Add to vinegar mixture and mix gently to coat. Drain and rinse peas and corn. Add peas, corn, onions, cilantro, and tomatoes to avocado. Mix gently to coat. Add salt to taste.
