Baked Acorn Squash

This is my favorite Fall comfort food. It's healthy, warm, sweet, and perfect on the palate. Not to mention, so easy to make. It's a great side dish, but I eat it as a snack as well.

Baked Acorn Squash

2 acorn squash, split in half
Water
2 tablespoons light brown sugar
6 tablespoons butter
Salt and pepper

Preheat oven to 350 degrees. Place squash, flesh side down in a baking dish and fill with 1/2-inch of water. Bake for one hour or until tender. Scoop out squash flesh to a bowl. Mash squash with butter, sugar and salt and pepper. Serve with extra butter.

thanks for posting! can you believe i've never tried acorn squash?! i will definitely pick some up next time i visit the farmer's market!
