Gluten Free Meatloaf The Best!


I hate meatloaf with a passion. A loaf of meat just doesn't sound appetizing to me, but my husband loves meatloaf. So I decided to surprise him with "the best meatloaf" he "ever ate", his words.


Ingredients:


 ½ Cup Quinoa
1 Cup Gluten-Free Chicken Broth
1 Teaspoon Nakano Seasoned Rice Vinegar
   or Apple Cider Vinegar
1 Egg, Slightly Beaten
1½ Pounds Lean Ground Turkey
½ Cup Minced Sweet Onion
2 Teaspoons Minced Garlic (approx two cloves)
½ Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Dried Parsley
1 Tablespoon Chives
1 Teaspoon gluten-free Worcestershire Sauce
1 Teaspoon gluten-free soy sauce
3 Tablespoons Gluten-free BBQ Sauce
½ Cup Ketchup 

Directions:

Boil Quinoa, chicken broth and vinegar in medium sauce pan. Cover and simmer until water is absorbed (approximately 15). Set aside and allow cooked Quinoa to cool.
Preheat oven to 350° F.
In large bowl, place egg and beat slightly. Add ground turkey, onion, garlic, salt, pepper, parsley, chives, Worcestershire sauce, soy sauce and cooled cooked Quinoa. Mix thoroughly. Place mixture evenly in greased (cooking spray coated) loaf pan. In a small bowl, stir together BBQ sauce and ketchup. Spread evenly over the top of the meat loaf. Bake for 1 hour and 20 minutes.
