Gluten Free Chicken Lemon Pasta


My husband made this recipe the other day. This dish is absolutely delicious. I certainly made me gain a new love for pasta since becoming gluten free.

Ingredients:
1 lb gluten free Penne
2 chicken breasts cut into slices
Salt and ground pepper
1 tsp minced garlic
1/4 tsp red pepper flakes
4 Tbsp olive oil (divided)
3 Tbsp parsley
2 lemons, juiced
1/2 grated Parmesan

Directions:
Cook 1 Tbsp olive oil with gluten free Penne, according to directions.
Season chicken with salt and pepper. Heat a large grill style pan over medium high heat and add chicken. Grill until golden and cooked thoroughly. Remove from pan to a plate and slice.
Add garlic, red pepper flakes, and 3 Tbsp olive oil to a saute pan. Saute until fragrant. Add the cooked pasta and turn off heat. Mix together.
Put pasta mixture into a large bowl. Add chicken to pasta mixture and season with salt, pepper, and parsley. Then add the juice of 2 lemons and mix well. Top with Parmesan before serving.
