Yummy Apple, Pear, and Persimmon Crisp - By Brenna

My best friend, Brenna, made this delicious crisp for a dinner party we had not to long ago. Let me tell you, it was the best crisp I have ever had! Even better than the non gluten free crisps I have had in my past life. So since it was so yummy, I am going to share her recipe with you. But the credit goes completely to Brenna!

Preheat Oven to 350˚

Filling:
  • 4 pears                                                                  
  • 5-6 apples
  • 3 Chinese persimmons 
  • 2 Tbsp orange juice                                            
  • 2 Tbsp lemon juice
  • ½ cup sugar                                                         
  • ¼ cup oat flour
  • 1 tsp cinnamon                                                   
  • ½ tsp nutmeg
Topping:
  • 1 ½ cups oat flour                                                     
  • ¾ cup sugar
  • ¾ cup brown sugar, packed                              
  • ½ tsp salt
  • 1 cup old fashioned oatmeal                           
  • 2 sticks cold margarine, diced  
For the filling peel and core pears and apples and persimmons and cut into large chunks.  Place fruit in a large bowl and add other filling ingredients.  Pour into a 9 x 12 baking dish. Combine topping ingredients with electric mixer until it is large crumbles.  Sprinkle evenly over the fruit.  Bake for 50 min. or until top is brown and bubbly.
