Best Ever German Pancakes!

I have had the hardest time finding a gluten free German pancake recipe. I love German pancakes, and haven't had any since before my diagnosis. So I figured out my own recipe, tested it, family approved. Here goes nothing!

2 Tbs oil or butter(grease your baking dish with)
4 eggs
1 Tbs. sugar
2/3 Cup milk
2/3 Cup All purpose baking flour, gluten free (I used Pamela's Baking and Pancake flour)
1/8 tsp salt

Grease your baking dish, set oven to 400. In a medium mixing bowl, beat eggs until light in color. Add the rest of the ingredients and mix until smooth. It should be runny. Pour into baking dish. (side note: if you want thick pancakes, use an 9X9 if you want a thin layer pancake, use a 9X13) I used a 9X13 this time around. Bake for 10 min at 400, then reduce heat to 350 and bake for 20 min. Serve with butter, powdered sugar, and lemon juice. Or you could use regular syrups as well. Enjoy!
