Deceptive Spaghetti Pie

I recently bought Jessica Seinfeld's Deceptively Delicious. It's not my child that has a hard time eating fruits and veggies, it's the husband. Well, I found a great recipe that I could easily change to gluten free. I ingredients and instructions as follows:


1/4 package of gluten free spaghetti noodles broken in half
1/2 pound ground turkey
1/2 cup purred broccoli or zucchini puree
1 large egg
2 Tbsp grated Parmesan
1 Tbsp garlic powder
2 cups pasta sauce
1 cup low fat cottage cheese
1/4 cup carrot puree
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded mozzarella

Preheat oven to 350. Coat a 9 inch pie plate with cooking spray. Bring a large pot of water, salt, and olive oil to boil. Add the pasta, and cook until slightly firm. Drain. In a small bowl, mix the ground turkey with the broccoli or zucchini puree, egg, Parmesan, and garlic powder. Form the mixture into 1/2 inch balls. In a large bowl, stir the cooked pasta, sauce, cottage cheese, carrot puree, and salt and pepper. Spoon the mixture into the pie plate and smooth the top. Scatter meatballs on top and sprinkle with mozzarella. Bake, uncovered, until bubbly. 30 min.

This was delicious. No one knew any veggies were hidden!
