Baked Cake Mix Donuts: Gluten Free

In my attempt to find the perfect recipe for baked donuts using a cake mix (preferably Betty Crocker's). I found nothing. Just a bunch of doughnut recipes that called for way too many ingredients or vegan, egg free, dairy free. All that doesn't apply to our home. Also, I really don't remember what normal cake doughnuts taste like so this recipe is a shot in the dark and a mixture of the Betty Crocker vanilla cake mix, Bob's Red Mill All Purpose Baking Flour and a normal baked doughnut recipe.

1 box of Betty Crocker Vanilla Cake Mix
3/4 Cup Bob's Red Mill All Purpose Baking Flour
4 TBSP butter (melted)
1 tsp vanilla
2 eggs
3/4 Cup Buttermilk (or 1/2 Cup whole milk mixed with 1/4 Cup orange juice)
1/2 tsp nutmeg or cinnamon ( I used cinnamon)

Frosting: Betty Crocker Chocolate Frosting was requested at my house.

Set oven at 350. In a large bowl mix all your ingredients together, using a mixer. Once mixture is a soft doughy consistency, pour into a large zip lock bag. Let all the air out before closing bag. Cut the tip off one side of the bottom of the bag. Squeeze the mixture in a circle in your New Nordic Donut Pan! That's what I have, can't you tell? Bake for 15 to 20 min. Let cool 10 min. Then frost! Enjoy!


This should make about 18 donuts. Unless you are generous with your first batch like me, then it will make you 16 donuts....My first batch wasn't as good as my second or third. I put too much batter in and only baked for 15 min - too spongey. The second batch I did one round of filling then baked for 20 min. SO MUCH BETTER! It all depends on how you like your donuts though. This was a hit at our place, and the yummy donuts encouraged my 22 month old to use her potty! Success!
