Peach Berry Crisp

This is a recent favorite with my little family unit, even with my husband, who has a strange phobia of warm fruit. I highly recommend for the vegan's and gluten free eaters!

3 (15 ounce) cans of sliced peaches, drained
1/2 tsp almond or vanilla extract
juice of 1 lemon
1 1/2 cups fresh or frozen berries (I used the Very Cherry Berry Blend from Trader Joe's, which consists of cherry's, blackberries, and raspberries)
3/4 Cup butter, margarine, or veg substitute (melted)
1 Cup Oat or Brown Rice flour ( I used Bob's Red Mill Brown Rice Flour)
1 1/4 packed brown sugar
1 1/4 Cup GF quick cooking oats
Vanilla Ice Cream (optional)

Place peaches in a 9X13 inch baking dish. Stir in extract and lemon juice. Sprinkle berry mixture on top. In a bowl, combine butter or margarine or sub., GF flour, brown sugar, and oats. Sprinkle over top of peaches and berries. Bake at 350 for 35 to 40 min. Serve warm with vanilla ice cream. Serves 8 to 10.
