Chicken Apple Curry

I got this recipe from a cookbook based on foods found at Costco. I revised it only a little to make it gluten free. It was absolutely delicious. I would make this again, especially since it has ingredients that we already have in our home normally. I do recommend taking this for a taste drive.

1/4 cup of white rice flour (I used Bob's Red Mill)
1 tsp salt, divided
1/8 tsp pepper
4 boneless, skinless chicken breasts (I used 2 split in half for our family of 3)
1 TBSP vegetable oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper (I used red, that's what I had on hand)
1/2 cup sliced carrots
1 1/2 cup applesauce (I used 3/4 cup)
1 TBSP curry powder (I used yellow curry powder)

Combine flour, 1/2 tsp salt, and pepper. Dredge chicken in the seasoned flour. Heat oil in a large nonstick skillet. Add chicken and brown over medium heat, turning frequently. Remove chicken to microwave safe  baking dish, placing the thickest portions toward the outside edges. Add onion, bell pepper, and carrots to the skillet and saute' over medium heat until slightly softened. Stir in applesauce, curry, and remaining salt. Pour the sauce over the chicken. Cover with wax paper. Microwave on high for 7 - 10 minutes, or until the chicken is cooked and juices run clear when cut with a knife. Makes 4 servings.
