Spinach Pie

Nonstick cooking spray
3 TBSP butter
1 medium onion, chopped
3 large eggs
16 oz cottage cheese
1 cup grated mozzarella cheese
1/4 tsp salt
1/2 tsp pepper
1 tsp dried dill
10 oz frozen spinach, I used a bag of fresh spinach then froze it overnight
2 cups cooked chopped turkey or chicken(optional)

Preheat your oven to 350. Spray a 9 inch pie plate with non stick spray. Melt butter in a large skillet over medium heat, add the chopped onion and saute until tender. In a large bowl, whisk the egg lightly, stir in the cottage cheese, mozzarella, salt, pepper, and dill. Stir in the onions and spinach until well blended. Add the meat if so desired. I cooked my turkey in the crock pot the day before. if you added meat, please stir it in until it is covered in the rest of the ingredients. Spoon the mixture in to the sprayed pie plate. Bake pie at 350 for 45 to 55 minutes, until its starts to golden at the top. let rest for 10 min before cutting and serving.
