I really needed a recipe that didn't require cooking or a lot of work. It has been 90 to 100 degrees lately, so being in the kitchen preparing a meal hasn't sounded thrilling. I went to my I Eat Gluten Free Pinterest Board to see what I could make for dinner without the effort. I saw that I had pinned
Paula Deen's Southwestern Avocado and Black Bean Salad, and
Our Best Bites Cilantro-Lime Vinaigrette. I purposely chose not to do Paula's dressing, because I wanted to try something a little more creamier looking. More color I suppose. They go great together.
This is exactly what our lil' family needed. It was light, healthy, and not hot! Very, very east to make and very, very delicious. Even my 2 year old liked it, but she also likes to go pick chives and green onions from the garden and eat them like it's nobody's business.
