Pinteresting 19: Coconut Chicken Satay with Peanut Sauce

I have been trying to make things lately that don't take as long in the kitchen and doesn't heat the home up. It is still so incredibly hot! So, I made a quick Chicken Satay minus the skewers, plus some rice - and peanut sauce for topping rather than a dip. Yeah, you could say I tweaked it a bit. But still delicious. I pinned this recipe a while back, because it called for coconut milk, and we had a few cans that needed to get used. This recipe came from The Perfect Pantry. I didn't make my own peanut sauce, instead I bought pre-made by Thai Kitchen (pssss, they have a lot of gluten free products) The meal was delicious and was eaten up quickly. No left overs at all. Looks like I will just have to make it again.
