Bacon Wrapped Chicken

2 boneless skinless chicken breasts, sliced in half to make thinner and to equal 4.
Crushed dried mint
4 slices of bacon
1 egg
1/2 cup gluten free flour (I used Bob's Red Mill Brown Rice Flour)
1 TBS olive oil
2 TBS butter

Slice your chicken breasts, in half, lengthwise. Sprinkle salt, pepper, savory, and mint on each slice of chicken. Wrap your bacon around the slice of each chicken. If the chicken is too thick to wrap your bacon around, then form it into a zig-zag shape down one side of each slice of chicken. Whisk your egg in a shallow dish, dip each slice of bacon wrapped chicken in the egg, both sides. Then dip it into your shallow dish of flour. In a skillet have the oil and melted butter ready for you to place the chicken in. Cook each slice of chicken 4 min each side. Very delicious. My husband loved this meal. you can serve alongside salad, or pasta, or brown rice.
