Chicken Enchiladas Using Udi's Gluten Free Flour Tortillas

I must tell you, I am in love with these tortillas. Though small, they are still tasty. I really recommend purchasing. Udi's is just coming out with the most amazing gluten free items lately. I still have yet to try their new granola's.

Ingredients:
1 pack of Udi's Gluten Free Flour Tortillas (8 ct)
2 TBSP Oil
2 Cups cooked chicken
1/4 cup chopped green onions
3 cups shredded cheddar or Mexican blend cheese
1 cup sour cream, divided
1 can of tomato sauce
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin

Heat oven at 350. Warm tortillas according to packaging directions. Warm tomato sauce, onion powder, garlic powder, and cumin in a small sauce pan. set 1/4 cup of sauce mixture aside and mix with 1/2 cup sour cream. Set aside. Fill warmed tortillas with a couple spoonfuls of chicken, sprinkle cheese and green onion and sour cream tomato sauce mixture. Once all filled tortillas are rolled up and placed in a baking dish, top off with tomato sauce, remaining cheese and green onions. Bake for 15 to 20 min, or until cheese is melted. Top with favorite items. This has no spice, so it's kid friendly. Add spice if desired. This was delicious. Husband said it was one of my best dishes. Enjoy.
